Ceremonial Grade Organic Matcha
Ceremonial Grade matcha is made using pure shaded Gyokuro grown in Japan. These hand selected leaves are picked during a short two week period in May. The result is a refined brew with the classic unami flavor characteristics that is the signature hallmark of high grade matcha.
Grown in Japan, this Matcha used pure Gyokuro leaves that has been shaded for 3 weeks before plucking, which gives the leaves the rich green color. Once plucked, the leaves are steamed and dried. The leaves are stripped of stems and veins and is now known as Tencha. At this point the tea is ground into a fine powder by special stone mills that grind only 40 grams per hour! This Matcha is tested for MRL (maximum residue limits) for a variety of chemicals and is considered as safe as organic.

I like this matcha. Its got a good flavor that is different than lesser matcha choices. I guess this is the kind the actually use during tea ceremonies, too. That probably contributes to the flavor a bit.
