This 7A grade ceremonial matcha uses only select handpicked leaves from premium shaded green tea. The stems and veins are removed and then carefully stone ground. The harvesting time is typically in May. Roughly six weeks before harvest, the leaves are covered in dark vinyl sheets. The idea is to slowly and gradually decrease the amount of sunlight, and hence photosynthesis, by covering up more and more of the light allowed to shine on the plants. As a result of this decreased light, the tea leaves produce increasing amounts of both chlorophyll and amino acids; The increased amino acid content serves to concentrate specific molecules, most of which are glutamates, which give the match its intense umami flavor profile. Great matcha is sweet and mouth-watery, with no traces of bitterness, because of this high amino acid content. Only the smallest, youngest/greenest parts of the plant - the two leaves at the tip of each new shoot - are picked. They are then steamed to preserve the color and nutrients, and to stop the enzymatic action within the leaves, then thoroughly dried in large cages equipped with heated blowers, then slowly ground to produce the final product.

Enjoy the convenience of a single-serve Pu-erh Tuo Cha, molded into a neat little cake and infused with Semnostachya Menglaensis for a subtle sticky rice aroma that complements the deep, earthy character of aged pu-erh. Each tuo cha offers a balanced cup that highlights classic fermented tea notes with a gentle, toasty sweetness, perfect when you want a focused, ritual-style brew without extra fuss. Full brewing instructions: Place the tuo cha in a teapot or gaiwan and pour boiling water over it for about 15 seconds to rinse, then discard the rinse water. Refill with 8 oz of boiling water and steep 3 to 5 minutes, adjusting to taste. When the cup is down to roughly 1/3 left, top off with boiling water to continue sipping, this re-steep approach yields 3 to 4 enjoyable infusions. Serve it on its own to appreciate the layered flavors, or pair with dim sum, light pastries, or savory snacks. Kamairicha is Japan's pan-fired green tea, a rare style that forgoes the steaming process used in nearly all Japanese tea production in favor of the pan-firing method common throughout China and much of the rest of the tea-growing world. The result is a green tea that feels both distinctly Japanese and genuinely unlike anything else in our lineup. This particular Kamairicha is grown near the Ojiro River in the semi-mountainous Kanaya region, where favorable elevation, water access, and regional geography create ideal conditions for tea cultivation. Made from the Yabukita cultivar, Japan's most celebrated tea plant, and produced by a farmer deeply committed to honoring traditional technique while pushing his craft forward, this is a tea with a clear point of view. The pan-firing process also skips several of the rolling stages typical of sencha production, yielding a beautifully twisted, open leaf that's striking in the tin and expressive in the cup. In the cup, the aroma opens with nori and sweet anko, giving way to roasted nuts and a whisper of roasted poblano pepper.
