Lemon Cloud Matcha Latte Ingredients
4g (~2 tsp) Ceremonial Grade Matcha
4oz hot water (not boiling)
½ oz simple syrup
1-2 tbsp lemon curd
4oz choice of milk
Ice cubes
Lemon Cheesecake Cold Foam Ingredients
3 tbsp heavy cream
2 tbsp whole milk
1 tbsp lemon curd
Lemon Cloud Matcha Latte Recipe
Sift 4g (~2 tsp) matcha powder into a small bowl
Slowly add 4oz hot water (not boiling). Whisk briskly in a “W” or “M” motion with a matcha whisk until the tea becomes frothy with fine bubbles and no visible lumps.
Add ½ oz simple syrup to matcha and stir. Set aside.
Smear 1-2 tbsp lemon curd around bottom of a glass
Pour ½ cup milk into your glass and mix
Fill glass with ice
Pour matcha over milk to layer
In a separate tall cup, combine 3tbsp heavy cream, 2 tbsp whole milk, 1 tbsp lemon curd, and 1 tbsp cheesecake topping. Using an electric hand milk frother, mix until thick.
Top matcha with lemon cheesecake cold foam
Optional: garnish with candied lemon slice on top
